Mary Berry's Apple and Sultana Dessert Cake

A brilliant cake, which I used to make years ago when my children were small.  It's made even more brilliant by using fairtrade ingredients.  It's also very handy to make with the glut of apples that are around at the moment. And it actually goes in an 8" or 20 cm round cake tin which I happen to have!



You can find it in several versions of the book 'Fast Cakes'*.


It needs 100g caster sugar so I used Traidcraft's  lovely natural caster from Mauritius.
The 50g sultanas were from Traidcraft^ too. I bought them both at Fairer World in York.
